Cubeb Pepper Berries
 

Cubeb pepper berries come from a plant that is closely related to black pepper. Its flavor is hotter than that of black peppercorns with notes of allspice and cloves.

 

The cubeb pepper berries are sometimes called tailed pepper because a small edible piece of vine remains attached to the pepper after it has been harvested. This little piece of stem gives this unique kind of pepper the appearance of having a little tail.

 

Cubeb pepper has been used for 100s of years and was an alternative to black pepper in the 1600s, it was used by the Greeks, and was popular during the middle ages as a cheaper alternative to black pepper. Cubeb pepper was used culinary in the United States until the early 1900s as a cheaper substitute for black peppercorns when its use was entirely replaced by black pepper whose price had been dropping making it affordable to common people for everyday use.

Cubeb pepper is especially popular in Indonesian cuisines, frequently being added to curries, it is also used in some north African countries and added to Moroccan spice blends. In addition to these culinary uses Cubeb pepper berries are used to flavor some gins, peppered vodka, cigarettes called cubebs, soaps, and perfumes.

Cubeb pepper, Piper cubeba, is in the same genus as black pepper, but the peppercorns themselves are bigger than black pepper, often hollow, and of course have their signature "tails". Both kinds of peppercorns are formed on a flowering spike that grows from a bushy tropical vine.

Cubeb pepper is native to the islands around Indonesia so it isn't surprising that it's mostly grown in Indonesia, Java and Sumatra but also some Africa countries. The berries are picked while still immature and carefully dried until the color is from black to a grayish brown.

 

Cubeb pepper is also known as cubebs, tailed pepper, java pepper, Jawa peppercorn, Jawanese pepper, Poivre de Java (French), kumukus (Javanese), komakon (Greek), kabab chini (Chinese cubeb, but the same name is used for allspice (India)). In China this pepper is called both vilenga, and vidanga where it is used medically.
