A Brief History of Grains of
Paradise Use
Grains
of Paradise were an important spice in Europe during Christopher
Columbus's time, when they were used as a cheaper substitute for black
peppercorns. But, as new trade routes were discovered that allowed sailing ships
to sail from black pepper's native home of India to European consumers the
price of black pepper dropped.
This new lower price of black pepper caused the use of Grains of Paradise as a pepper
substitute to all but disappeared except in its native areas of West and
Northern Africa. In recent years however, its popularity has greatly increased
large due to high profile chefs touting Grains of Paradise's unique flavor
as a pepper substitute or as an addition to pepper blends.
About the Plant Grains of
Paradise Come From
Grains of Paradise,Aframomum melegueta,
are a member of the ginger plant family,
Zingiberaceae. The plant is native to the west coast
of Africa and much of this exotic spice available to the world market is
produced in the country of Ghana.
Grains of Paradise come in a pod similar to green and
black cardamom, the seeds themselves are from a maroon color to yellow
when fresh and dry to a reddish brown. The Grains triangular in shape and
a dark reddish brown in color, except for this color they look very
similar to cardamom seeds, a relative.
Grains of Paradise are also called Melegueta Pepper,
Guinea pepper, Alligator pepper, Graines de paradis.
Grains of Paradise are used to flavor some beers as
well as foods.
