Cinnamon is a classic American ingredient in apple pies & cinnamon rolls. This particular kind of cinnamon is especially suited for baking because it's flavor is as strong as the regular Cassia cinnamon, but has a smoother flavor with less bite. In the US, cinnamon spice is often added to baked goods, stewed fruits, applesauce, and is a common ingredient in many spice mixtures for pudding, pastry spice, mulling spices, and even toast. Try adding cinnamon to marinades, mulled wine, soups, meats, pasta, breads, pastries, and even vegetables as is often done in Europe and Canada. Mexico's famous Mole sauce contains cinnamon and it is a favorite topping for hot chocolate there. Cinnamon, in one form or another, is added to many nonfood consumer products such as gum, mouthwash, toothpaste, and flavored cinnamon toothpicks. It's warm flavor is often found in ciders, and some specialty beers, such as pumpkin and winter brews. It is also used in perfumes, potpourri, and scented sprays. Cinnamon Sticks & powder are often used in crafts such as making cinnamon scented candles and soaps. Medical benefits of cinnamon have been suggested for ailments such as high cholesterol and certain types of diabetes. A cinnamon cholesterol reducing treatment is often ingested with "cinnamon capsules", gel caps filled with several grams of finely ground cinnamon. Recent medical research has even revealed that cinnamon contains a high concentration of antioxidants*. |

The Cinnamon Tree: | ||||
|
This Cinnamon plants botanical name is Cinnamomum Aromaticum, or Cassia and belongs to the Laurel family, as do bay leaves and avocadoes. Cassia cinnamon is an evergreen tree growing up to 40 feet tall and coved with an aromatic bark. The leaves are symmetrical, oblong, about 7 inches long and, have a appearance similar to bay leaves. Small yellow flowers hang from the ends of the branches and bloom in early summer. Cassia grows in hot, wet, tropical climates both wild and commercially. During harvesting, the branches are cut down when the cinnamon bark has matured. After being removed, the cinnamon bark is then cut into short lengths that curl as they dry into the spice we know as cinnamon sticks.

Cinnamon Sugar Cinnamon Sugar can easily be made by combining white granular sugar and Finley ground cinnamon. Mix together 7 parts granulated sugar to 1 part cinnamon powder.
Cinnamon tea: Add approximately 1/4 teaspoon cinnamon to one cup of boiling water and steep for 10 minutes.

Chicken (In
a delicately Indonesian curry) This is a great recipe with cinnamon! 3 lbs chicken 4 brazil nuts, ground 1/2 tsp chili powder 2 tsp coriander ground 1 tsp galangal (Laos powder) Optional 1 garlic clove, crushed 1/2 tsp turmeric, ground 4 tbsp oil 2 onions chopped 3 cups coconut milk 1 Teaspoon cinnamon powder 1 lemon grass stalk 2 tbsp lemon juice Salt to taste
Cinnamon Butter Add cinnamon to softened butter to taste, mix well, and let sit un-refrigerated 1 hour. place butter mixture evenly along one edge of a sheet of wax paper. Roll the wax paper up and tightly tie off the ends of the "butter roll". Refrigerated or freeze until firm and after removing the paper, serve in slices.
Cinnamon soap Soaking cinnamon powder in plain rubbing alcohol for several days can make a
cinnamon extract scent. Run the mixture through a coffee filter. Then
simply allow the alcohol to evaporate and you will have potent
cinnamon sent. ( For consumption, substitute a strong drinking alcohol
with little flavor)
