Rosemary Plants:

Rosemary is a very fragrant plant, which produces extremely delicate, purple to white flowers. The leave of the rosemary plant (Rosmarinus officinalis) are long, slender, dark green and extremely fragrant. The fresh leaves of this evergreen plant are a light color on the bottom and slightly sticky; a powerfully scented and flavored resin coats them. The rosemary plant is a Simi hardwood native of the Mediterranean that can grow four to six feet tall.  its Latin name, ros-marinus, means "dew of the sea", presumably because rosemary likes to grow by the sea. The plant has been burned as a kind of incense for thousands of years; today it is also widely used in food and beauty products such as popular shampoos, facial washes and perfumes.

 

Use of Rosemary:

Humans have consumed Rosemary at least since Egyptian times; it has a strong and powerful flavor that should be used sparingly. Today, the herb is very important in southern Mediterranean and French cooking. The leaves have a strong, somewhat antiseptic scent. its flavor is reminiscent of a sweet pine. Rosemary is very good on roasted or grilled foods; it is also commonly combined with vegetables, roasted chicken, lamb, fish, added to soups, sauces, stuffing, and marinades. The fresh leaves of this plant can easily be saved for use later by drying, or freezing them.  

Other Uses of Rosemary:

Rosemary also is widely used in beauty products such as popular shampoos, facial washes and perfumes. Try making strong rosemary tea to use as a hair rinse, or to add to shampoos and conditioners. Soaking rosemary leaves in plain rubbing alcohol for several days makes a concentrated rosemary scent. Remove the leaves; if alcohol has partials in it, the mixture will need to be run through a coffee filter. Then simple allow the alcohol to evaporate and you will have potent rosemary scent.

To make rosemary-scented soap, add the above described concentrated rosemary scent to melted Neutrogena soap (or similar soap) and allow cooling in desired mold shapes. Try adding a few whole leaves to the mold before the soap cools to add a decorative touch.

The rosemary plant has also been used for its many medical properties since ancient times. It is most well known as a mild antidepressant.

Rosemary Recipes:

Rosemary Bean Salad:

Mix together 1 1/4 pounds canned white beans (cannelloni), 1 teaspoon diced red pepper, and 1 teaspoon finely minced rosemary. Marinated for a least one hour in a mixture of 2 tablespoons red wine vinegar, a dash of salt, a dash of fresh ground white pepper, one small clove of finely minced garlic whisked with 6 tablespoons of extra virgin olive oil. Serve cold.

Baked Garlic with Rosemary:

Put three whole heads of garlic in an oven and stove top safe container; add a generous cup a red wine, and a sprig of both thyme and rosemary. Bring to a boil and bake at 350° for 30 min. The garlic can be eaten with meats, or on nice crusty bread as an appetizer. 

Rosemary Cooking Hints:

-Use rosemary sparely

-its flavor goes well with garlic, red wine, and roasted foods

-Rosemary is especially good on chicken

-Grind, or crush rosemary just prior to use

Growing Rosemary:

This herb is very sensitive to cold weather. In cool climates, Rosemary must be brought indoors at the first hint of cold weather. It prefers ample sunshine and well-drained, sandy, and dry soil. The fragrant and delicate flowers bloom from spring to late summer.
