| Vanilla is the extract of a bean
produced by two variety of orchids, Vanilla Planifolia and V.
Tahitensis
which both belong to the
Orchidaceae family. These amazing new world
orchid climbs other plants (including tall trees!) to reach the Sun's
light and produces long slender "beans" which hang 6-8 inches
towards the ground.
The aroma and flavor of these extraordinary beans are as amazing as the small yellow flowers themselves. The Vanilla orchid has succulent 6-inch long leaves and roots which protrude from the nodes and support the plant by grasping other plants and rocks. The Vanilla orchid is often grown in places such as Mexico in Central American, Africa, Madagascar, Tahiti, India, and Indonesia. The vanilla beans are picked while still green and fermented, or sweat, in order to produce the beautiful vanilla favor and sent. They can then be made into vanilla extract, or sold as whole beans. These fermented vanilla pods (beans) are long, slender, and black in color. They encase numerous little black seeds that look like tiny caviar, which contain the majority or the vanilla flavor and aroma. The vanilla extract is made by soaking whole vanilla beans in a strong alcohol, at least 35%, which doesn't have a over powering flavor of it's own (We would suggest white rum). The mixture is strained and the vanilla flavored liquid that remains is pure vanilla extract!

| Vanilla
was discovered by Europeans in the 1500s when it was given to Spanish

Aztecs gave them this special flavoring as an ingredient in a chocolate
and vanilla beverage. It was not long before the Europeans brought
it home and found other uses for it. Vanilla quickly became an essential
component of many recipes.

Vanilla Essence, or extract, also go surprisingly well with seafood such as mild fish and shellfish.
Vanilla Syrup 1- 1/2 cups packed brown sugar 1 cup water 2 Tablespoons Vanilla Extract Combine sugar and water in a medium saucepan and mix thoroughly. Bring to the boil, cool and add vanilla extract. Serve on cake, fresh fruit, or ice cream. Vanilla-Rum Glaze 1 cup sugar Dissolve sugar into water in a small sauce pan. Bring to a boil, reduce heat, and simmer until syrup begins to thicken. About 10 minutes. Slightly cool and add vanilla extract and rum. Serve on ice cream or pound cake.
