often called Pink Peppercorns, Peruvian pepper, Baies Rose
Plant, or Peppertree (Schinus molle) that is native
to South America.
Rose plant is a small tree that has numerous compound leaves
with slender, symmetrical, leaflets on each side of the
peppercorns form in clusters on the tips of the branches and
can be from white, at an immature age, to pink or even a
dark red. Like its cousin the mango (Anacardiaceae
family), this plant can also cause allergies.
or the Brazilian Peppertree, is a closely related species whose
are also sold as pink peppercorns in some areas. This pink pepper
plant, like Sch. molle, is also a small tree when fully
grown. The biggest difference between it and Sch. molle
is their compound leaves. The Leaves of Sch. terebinthifolius
have fewer leaflets, are more stubby, rounded, and the veins on the
leaves are also light green. It has an appearance similar to that of
holly and is used as a substitute for it. Schinus terebinthifolius
grows wildly in only a couple of parts of the United States, mostly
low lying areas with plentiful water such as wetlands. The branches of
this sort of tree intertwine to form a thick barrier that blocks light
from reaching surrounding plants. Its berries are almost identical to
that of its close relative Schinus molle.

Pink Peppercorn Sauce
2 1/2 teaspoons butter
1 teaspoon crushed pink Peppercorns
1 teaspoon finely chopped pimentos
1 teaspoon finely chopped sun-dried tomatoes
4 ounce heavy cream
Melt butter in a saucepan (or use it to deglaze a pan), add
peppercorns, pimentos, and sun-dried tomatoes, cook a couple of
minutes stirring continuously. Slowly stir in heavy cream and
reduce to the desired thickness.
Pink Peppercorn Chicken
4 boneless chicken
2 cups dry white wine
5 medium leeks, rinsed and julienne in
1-inch strips (lower part of the stalk only)
2 tablespoons pink
2 tablespoons unsalted butter
Trim chicken breasts of any excess fat, place between two sheets
of waxed paper and pound to an even thickness and season with salt
and black pepper. Place flattened breasts into a shallow pan and
cover with white wine. Marinate for one hour.
Place the leeks beneath the chicken breasts
in a shallow pan. Sprinkle each with 1/2 tablespoon of rosemary
and 1/2 tablespoon pink peppercorns.
Bake at 350 degrees until done, about 30 minutes.
Pink Peppercorn Vinaigrette
2. Add the shallots, chopped parsley and pink peppercorns.
3. Season to taste with salt and black pepper.
